Homemade Lemon Poppyseed Cake
I love lemon poppyseed anything, but with real lemon, and not using cake mix. I was surprised how many recipes used cake mix.
I just felt like baking one day, something I don't do very much of, one I feel like I can't because its not eating clean and I have gotten pretty soft over the winter, and two, the kids 'help' and soon they are fighting on who gets to do what. I like it when I have one helper, not 3 screaming death threats over scooping, pouring, and mixing. Ridic.
This recipe was great but I won't be adding the syrup on top next time. It was just too much, and my hubby and Peanut agreed. However, it was so light and fluffy, pairs great with a cup of tea!
